A Story About Gnocchi and Friendship

Today, I have a strong craving for gnocchi. As usual, I picked up Trader Joe's "almost pre-made version." We've tried both the sweet potato gnocchi and the cauliflower gnocchi, and both were quite good. This time, I went with the more traditional variety, simply labeled Trader Joe's gnocchi - product of Italy (Drumming up authenticity! I have high hopes for this one.)

Gnocchi with Pesto Chicken

Ingredients

  • Trader Joe's Gnocchi
  • 1 large chicken breast, sliced
  • Chicken seasoning: a pinch of salt, garlic powder, paprika, black pepper, and a splash of cooking wine
  • A couple of shallots, finely chopped
  • A few garlic cloves, crushed
  • A few mushrooms, sliced
  • Store-bought pesto sauce

Instructions

  1. 1.Marinate the chicken with the seasonings.
  2. 2.In a pan, fry the chicken, shallots, and garlic together.
  3. 3.When the chicken is nearly done, add the gnocchi and a generous amount of pesto sauce.
  4. 4.Cook for another 2 minutes until the gnocchi is soft, then serve.

The flavor is good, but the gnocchi is really soulless. Too soft, with an aftertaste that's hard to describe. This settled it. Karl and I both agreed: our friend Vivi's gnocchi is the best we've ever had. Nothing can surpass that. Period.

Would I make this again?Sure, preferrably the Vivi version.

Vivi and I met in an evening class. I was the shy one, head down during breaks, while Vivi was warm and generous — the kind of person who made everyone feel welcome. I was so grateful when she came over to introduce herself. Since then, we have gone on hikes together, and she has shared so much about her aspirations and goals.

When I met Vivi, I was at a very low point in my life. I had quit my soul-sucking corporate job and wanted to work on something meaningful, but I couldn't pull myself together. On top of that, I had lost my cat, Dum Dum. I felt like a shattered mess. However, every time I hung out with Vivi, I felt this unexpected adrenaline boost, even though she had no idea what I was going through. Her positivity was simply contagious. She is driven, resilient, and determined. Gradually, I found myself wanting to be more like her.

A few months into our friendship, Vivi invited Karl and me to her home to cook gnocchi from scratch. That evening turned out to be life-changing. We started with a mountain of boiled potatoes, mashing them before slowly kneading in rice flour. The concept was simple, but the execution wasn't easy. The "boys" with their big muscles took on most of the kneading. At first, it felt impossible; the potatoes and flour didn't seem to bind together. Like many things in life, it took grit and patience. Eventually, we managed to roll the dough into long noodles. From there, we shaped the gnocchi by cutting the long, thick noodles into smaller pieces and pressing them with a fork to create a lovely ridged pattern.

Vivi finished the dish by tossing the freshly made gnocchi into chicken and pesto sauce. Dead simple — and hands down the best gnocchi we've ever had.

What made it so special? I loved the texture. It's al dente, almost a little chewy, yet we can still taste the fresh potatoes. It had a personality that no store-bought version could touch. We couldn't stop raving about it afterward — and honestly, we still haven't. Just a couple of weeks ago, we tried the gnocchi at a fancy restaurant. Expensive. Pretty. Sadly, didn't come close.

I think what made Vivi's gnocchi such a revelation is that we all had a hand in making it. The taste of your own labor is always more rewarding. And above all, it was a beautiful evening celebrating a newly blossomed friendship.
